We are a group of people fascinated by Chinese black tea, with skills and knowledge passed down through generations, treating "making a good cup of tea" as a lifelong pursuit. The Black Tea Workshop takes Zhengshan Xiaozhong from Wuyi Tongmuguan as its starting point, incorporating renowned varieties such as Keemun, Dianhong, and Jin Jun Mei, seeking that true balance between origin and craftsmanship.
Our Story
The starting point of the Black Tea Workshop is not grand; it is a series of trips up the mountain and into the gardens, repeatedly experimenting in the tea room. We believe that good black tea is not designed but a co-creation that follows nature and respects time. Therefore, we insist on making tea that has a clear origin and a transparent process.
Production Areas and Heritage
- Zhengshan Xiaozhong: Pursuing "light smoke does not obscure the original fragrance," allowing pine smoke to complement honey and ripe fruit aromas.
- Keemun Black Tea: The layering of floral and fruity notes is our interpretation of elegance.
- Dianhong: High-altitude original leaves bring fullness and strength, suitable for both daily and advanced tasting.
- Jin Jun Mei: Hand-picked one bud and one leaf, slow-roasted over low heat, focusing on "fresh, lively, sweet, and smooth."
Craftsmanship
- Precise withering and gentle rolling: Finding balance between "freshness" and "sweetness."
- Segmented temperature-controlled fermentation: Retaining floral and fruity aromas while reducing off-flavors and dryness.
- Low-temperature re-roasting: Slowly baking at low temperatures to awaken aromatic layers and leave fragrance at the bottom of the cup.
